We are trying to eat healthier, use less oil and not use bread and cheese. This is a version of a favourite of ours that is also on this site, but has been toned down a bit. The Dukkah mixture can also be found on this site, it is a simple toasted nut and seed mixture that is quite lovely.
I decided that I can make my own Indian Food, low calorie and DELICIOUS. Feel free to add the potato that it usually has in it. I think you will love it.
I made this up while trying to come up with a way to get one serving of grain, two or three of veggies and a dairy into a single dish. Not sure if it counts as a full protein serving (depends on your dietary needs), but the quinoa is relatively high in protein, too, which is nice.
I'm having it in my lunch today, but it would make a nice dinner as well.

Not QUITE what the Greeks had in mind... Typically this recipe has potatoes or bread. This recipe has a healthy substitution making this snack higher in fiber and lower in fat.
I use it as a dip for vegetables, on hamburgers instead of ketchup; steaks, pasta, crackers, pita sandwiches and in cooking for added flavor.
This is a very nice twist of the original Italian Capresse. Let me know if you like it!
