Introduction

Ingredients

    Salad:
    1/4c cooked lentils
    1/4c cooked quinoa
    1/2c edamame, prepared
    1/2c chopped cucumber
    1/2c chopped pepper
    2 radishes, sliced
    (any other veggies your heart desires!)

    Dressing:
    2 tbsp rice wine vinegar
    1/2 tsp olive oil
    1/2 tsp sesame oil (or any flavorful oil)
    1/2 tsp low-sodium soy sauce
    1/4 tsp sriracha (optional)

Tips

Sriracha is optional but I did add it. Note it adds 1.5 calories and 25mg sodium.


Directions

Combine salad ingredients. In a shaker (or clean jam jar), combine dressing ingredients and shake vigorously. Pour over salad.
