This is a recipe my mother taught me when I was a child, and I still enjoy making it to this day.

It's a great recipe for that random day that you feel like cheating. Can be made healthier if you make your own cake mix and icing. You could also take the chocolate drizzle off if you want to make it healthier.

At just 150 calories each, these carrot cake cookies are wholesome enough to eat for breakfast. We like them with a tall glass of milk.

You can make any other cake mix into a cookie using this same recipe, just substitute the cake mix, but leave everything else the same.

For a little extra taste and/or nutrients, add shredded coconut, walnuts, chocolate chips, etc. (just remember to adjust the nutritional information for the additions)

In a bind and need to make a quick batch of cookies... this is a great recipe. NOTE: you can use any cake mix!!!
