Very nice side dish & use of okra. The falvor was very good, it cooked up easily and both my husband and I loved it. I will reduce the salt & Pepper to 0.5 tsp each. Now I have a reason to say "yes" when my in-laws offer fresh Okra from their garden.
I love fried okra but not the calories from fat. Hope this compares
I LOVE recipes like this - full of flavor, feels like you are splurging, but is very low calorie. It should probably read "32 SMALL pods fresh okra" to fit in one pan.
This was a great recipe... with the following modifications:
- I added a lot more spices (2x cumin, garlic salt to taste, 1 tsp fajita seasoning, 1 tsp chili spice).
- Just after splashing the first water, I added about 3 tbsp. fresh-squeezed lime juice.
I ended up eating the whole recipe!
Simple simple to make (just heat and splash with water!).
My husband and I loved the cumin okra. The cumin, pepper, and salt made a nice coating that was like a lighter version of the batter-fried okra.
I will make this whenever our farmer's market box gives us okra.
