Tried this last night and it was delicious. Added some Old Bay Cajun seasoning to the fillets and used fat free cream cheese as suggested by earlier comments. Will definitely be making this again.
OMG....Just AWESOME!!! I made a few changes...like used can crab meat, fresh shrimp that I sauteed with onions, bell peppers, and garlic!! I also used fat free cream cheese!!! I seasoned the fish with cajun seasoning.. And 1/4 cup of bread crumbs. Two thumbs up!!!
Awesome! I drizzled my fillets liberally with lemon juice (top & bottom) and added a tiny bit of kosher salt and course ground pepper before baking. The garlic powder was ever so slightly sprinkled on the middle ingredients. I also sprayed the top fillet just a little with olive oil baking spray.
This was VERY good. I added salt, pepper, and dill weed to jazz it up a bit. The family enjoyed it very much. Thanks so much for a quick and easy dish!
This was WONDERFUL. The nutrition is a little off...but it tasted just like Red Lobster's Crab Stuffed Flounder, except better b/c it's cheaper! Tip: I mixed the crab, mushrooms, shrimp and cheese into a mixture before stuffing.
I played with a few different variations-- add spinach, try mahi, no crab. My favorite was sundried tomatoes, shrooms, shrimp & crm cheese on top of the filet. I prefer fat free cream cheese, not Neufchatel. Why add more calories?

I recommend using filling as a topping. Don't make the sandwich
