This salad was sooo goood!!! I was worried it wouldn't turn out so great , but thankfully it is delish!! I used mint and cilantro. I can't wait to make it for my friends and fam too! Love that I can eat so much because it has such few calories!
What a unique and refreshing salad this is--and a calorie bargain, too. Made it exactly as directed, except used only a quarter of a red onion because that was all I had in the house. Interesting flavor combinations; watermelon becomes less fruit-like and more vegetable-like. Yum. Will make again.
It was just ok, would make again. Didn't care for the dressing at all. I prefer my own watermelon salad. I mix watermelon, few pistachios over arugula. lighter dressing made from extra virgin olive oil, blood orange vinegar, couple DROPS of agave, salt and pepper, micro-cilantro optional.
