Cut up baby bellas vs. canned mushrooms. Did try the low fat plain Greek yogurt. . . good sub for the 1/2 and 1/2. And finally, defnitely used a real egg. Really a delicious quiche.

My changes: no mushrooms, used frozen steam-able broccoli (1 cup), used Lactose-free 2% milk in place of skim and half-n-half, replaced Swiss with Lactose-free Sharp Cheddar. Added 1/4 cup chopped onion, 1/4 cup chopped green pepper. garlic salt. Put in a 8x8 square cake pan
I used egg whites instead of substitutes. Chopped broccoli and low fat cheddar mixed in. No mushrooms but it was very good. Next time chopped red pepper and chopped onions and black pepper for more flavour.

I made this without the skim milk (hidden sugar). It turned out good and fluffy.

I think next time I make this I will add a little low fat ham or perhaps a crust- it just needed something else.
This is a delicious twist on the traditional quiche! I love that it has no crust, prefect for low-carbing!
