Loved this. Made it for a friend who is on gluten free, low fat diet. Had plenty for her family and mine so I didn't have to make dinner twice today. I put fresh cilantro and chopped onions in with it. Tried a little for lunch and loved it then realized I didn't put in the taco seasoning still good
This was GREAT!! My whole family liked it! My 16 yr old even went back for seconds!!
I do have one question though what size servings are your listed calories calculated for? 1 cup, a 1/2 cup??
Tastes great! I added shrimp to mine as well to get more protein.
Delicious, easy, inexpensive, filling....all sorts of goodness in one pot...topped with a little low fat sour cream and a side of baked tortilla chips...so much flavor for so little fat. THANK YOU!
This is a great meal for a cold winter day! I did make some alterations. I halfed the recipe because it was just way too much soup for us. I also added a cup of fat free chicken broth and some diced onion and green peppers. I served it with crushed frito's on top for the kids. YUMM-O
