Seems like an awful lot of food, and the nutrients are being cooked out. I agree that the canned veggies might be rinsed to lessen the sodium, and 6-7 potatoes is a lot for 2 people. Some tweaking and I bet this will be a great meal!
Sounds pretty good although it is high in calories (just need to budget the rest of the day appropriately). I love that it's full of veggies and protein. However, the amount of sodium is scary- I would omit the salt and make sure to rinse canned veggies/use no salt added if possible. Thanks!
