I am rarely without cucumbers and they are a low calorie veggie you can dress up so many ways and still not have alot
of calories and great taste that fills you up.
I make something similar using fat free Italian dressing and grape tomatoes. No one at the family reunion knew a low cal and low carb dish could be so tasty!
The tomatoes and cucumbers from my garden are over (too hot), but we enjoyed scads of them with nothing but at little salt. Maybe next year I'll fancy up a bit with all these good ideas.
very good and seems as tho you can change things around a bit and still not hurt the caloric intake much. I like the idea of fat-free yogurt (or maybe even sour cream?). Might crack some black peppercorns over it and maybe add some red onion and zucchini. I'm real big on throwing veggies into everyt
Great summertime side. I'd opted for a seasoned rice vinegar rather than the mayo for less calories. Would definitely make again!
I use FF Italian or FF Classic Caeser dressing, add some sliced black olives and a few feta crumbles. Little more fat but it's mostly good fat and oh so yummy! A favorite with my family and most of the ingredients come fresh from my garden.
And here I thought I invented this recipe!! I use fat free peppercorn ranch dressing and believe it or not, montreal steak spice for seasoning. Awesome, easy salad without lettuce!!!

I used baslamic vinager low fat salad dressing instead of mayo. Let refrigerate over night to meld the flavors and it was awesome. Not my word but my daughters. They are picky eaters and have requested I make it again.

Without mayo for me, as I don't like the stuff - low fat yoghurt or soured cream is a good alternative.

This was a really nice, creamy, light side dish for the burgers we had the other night. I accidentally used low-fat Miracle Whip instead of mayo, and when I make it next time I'll be sure to use mayo. The Miracle Whip just changed the flavor, and I think mayo would definitely be better!
