I'm going to try this using lower sodium taco seasoning and soup.
Just a thought for those who are cutting out sour cream- try using plain Greek yogurt. It is creamy, thick,and rich while being entirely fat free. This is a GREAT substitute for sour cream!!
I used cumin, chili powder, and garlic instead of the taco seasoning to save on the salt. Very Yummy!
Don't worry about the sodium in the seasoning mix. It is just chili powder, and cumin. I add red pepper, and ancho chili powder. Make your own as needed then it could be as spicy or low salt as needed. I buy my herbs and spices in bulk and it is much cheaper than envelopes of mostly salt.
My whole family loved this! I used half a packet of reduced sodium taco seasoning. Last hour I added a can of black beans and a cup and half of frozen corn. I also did 6 chicken breasts and 2 cups salsa. Left overs are great!!
The receipt is great. Work full time, need a nutritional meal that does not require a lot of hands on. Grandkids will love it too.
this recipe sounds good but i am having trouble wrapping my head around the mushroom soup. i think i would omit that and use fat free sour cream.
Made this yesterday and enjoyed it a lot. I agree with other posters that variations can be made to reduce calories and sodium such as using chilli powder and cumin, and cayenne pepper instead of taco seasoning. I also like the suggestion of adding black beans and corn.
I used green salsa and two tablespoons of the low sodium taco seasoning recipe from Sparks. The chicken was quite spicy so I might cut back on the taco seasoning next time. Definitely a keeper recipe!
Wonderfully simple and so delicious! I even threw the chicken in frozen! Perfect! Left out the soup because of the MSG, added black beans for fiber and corn. So good!
This is a great recipe. I do not use the soup. I place the chicken in the crockpot with salsa, black beans, and at the end corn. When the meal is finished cooking, I add 1 brick of lowfat cream cheese. We then eat is over rice, in a tortilla, or as an appetizer with nachos. Delicious
I watch my sodium, so I used 2 TBLS Mrs Dash's Southwest Chipotle seasoning instead of Taco Seasoning. I added black beans and next time I'll add corn too. I served with brown rice and celery and carrot sticks. My family is on their hands and knees begging for it again.
