A lower fat, vegetarian version of the traditional Greek/Turkish beef and eggplant dish.
My attempt at making my own version of the Moussaka I had for the first time at a local Greek restaurant. I would have used ground chuck but had the already roasted beef to work with.

This recipe is very different from the traditional Greek moussaka, being more like a fabulous velvety aubergine stew. It's taken from Nigella Lawson's How to Eat, and she in turn has adapted it from Nada Saleh's Fragrance of the Earth.
I've been making this for years and it's definitely one of my favorite Greek dishes and goes from almost 700 calories a serving down to 488 by simply replacing oil with cooking spray :) Enjoy!

Simply the best Moussaka, you would never know it is vegetarian!!
Mashed potatoes replace cream sauce and ground lentils replace lamb in a casserole that serves a crowd. If you don't have a deep (3") baking dish, make this in two separate dishes.
