I threw in some eggplant, a pinch of thyme, and cracked black pepper...delish! I too, roast veggies frequently, and they are so full of flavor, fiber, and nutrition. I hadn't used vinegar before though...nice change. You could sub a sweet potato for the regular potato for variety as well.
