I used lite coconut milk and halved the recipe and it was GREAT! Thanks! The pepper and oil for cooking the meat isn't in the calorie count.
Just moved and there is no Trader Joes here but I found a decent panang paste at Walmart of all places. Fish sauce is everywhere. Now I need to track down the Kaffir lime leaves. Great recipe. I may try to sub peanut butter for the brown sugar.
