I am known for my pancakes, so trust me on this one! I am known for my pancakes, so trust me on this one!
Number of Servings: 8

Ingredients

    Whole Wheat Flour, 1.25 cup
    Baking Soda, 1 tsp
    Splenda No Calorie Sweetener, 2 tbsp
    Skim Milk, 1 cup
    Eggbeaters, .5 cup
    Vanilla extract, 1 tbsp
    Cinnamon, 2 tbsp

Directions

Mix flour, baking soda, and splenda in bowl. Mix milk, eggs, and vanilla in another bowl. Beat into dry mix roughly, so as to add more air to mix. Stir in cinnamon last. Serving size is 1/3 cup mix. Use PAM on skillet when cooking and sweeten with sugar free syrup and/or fruit!

Serving size is one pancake. If you use less than 1/3 of a cup batter (like 1/4, or 1/6) you can have two for 100 calories! Smaller, but more! :)

    I made these for dinner and breakfast the next day. Delicious! However, I omitted the splenda, and did 2 whole eggs instead of the beaters. I also mashed a banana and that added great flavor. Will be making these again! - 12/2/07

    SO, i made a couple of revisions to the recipe, but overall it was great. I put in 2 tbsp of brown sugar instead of splenda, added a smashed banana, used two eggs instead of egg beaters, added a tsp of baking powder, and and used 1 cup of flour and 1/3 cup of wheat germ for more protein and fiber.     I hate to disagree with most of the comments on here, but no one cared for these. They were chewy and very heavy as is with a lack of flavor. I suggest using more spices and baking powder to make them fluffier and more tasty if you are going to try this recipe. - 12/20/08

    I made these this morning and my whole family hated them. My son who is a pancake fanatic had to be forced to eat one(he usually eats at least 3). They were heavy and blan. I made them exactly as the recipe says but I definately wont make them again - 12/28/08

    I also substituted 1T baking powder for 1t baking soda. For soda to leaven there has to be some kind of acid (even the molasses in brown sugar can do it). Since there's nothing acidic in the recipe, the soda won't bubble. Otherwise good pancakes :-) - 10/20/09

    I hate to disagree with everyone, but no one liked them, not even me, and when watching my weight I'm not that picky. They were chewy and kind of hard, without much taste, even with extra cinnamon. Definitely not light or fluffy. Even with low-fat syrup. Sorry, not a fan. - 6/15/08

    I made these this morning and they were fantabulous!! Even my kids loved them. And I have picky kids. I did a couple of changes. I added 1/4 c. more milk to thin it out a little more. I also added one lg. egg and a T. water instead of the eggbeaters. Also, 1 t. baking powder and a little nutmeg. Yum - 8/14/08

    WOW! I thought these would be awful (tasted the raw batter, don't recommend that!) but they were AWESOME! Very filling, I had mine with just a little syrup and a glass of milk.     If you're a cinnamon fan like I am, these are AWESOME! I used Saigon cinnamon, which have a much stronger smell than normal cinnamon. Kitchen smelled great! I also used real eggs. I combined with Spark recipe for Warmed Apples and Granola as a topping - GREEEEEAAAT! - 2/6/08

    I made the batter the night before and stored in a tupperware in the fridge so it was ready to make for the kids before school and they were a huge hit. I used a tablespoon of brown sugar instead of Splenda, and was quite liberal with the cinnamon. They made the kitchen smell amazing! - 1/31/08

    I loved this recipe. The taste reminded me of the Eggo cinnamon waffles that I buy for my kids, only better. I topped them off with just a tiny bit of maple butter ( 1/2 cup butter with 1 tsp maple extract). I froze what I didn't eat and reheated them in the microwave the next morning. - 9/4/07

    This was ok. I made them for breakfast and found they really did not have any taste to them. I even added a banana to the mixture. Maybe it's the wheat flour that just doesn't make them fluffy. - 3/15/08

    These came out great. Super fluffy which is great since they are so hearty and heavy at the same time (in a good way). I really enjoyed them and they're much more filling than regular white pancakes. It took a whole lot of splenda packets though! I think next time I will use a bit of regular sugar. - 2/21/09

    I am not a big pancake person, but enjoyed these. I added blueberries to mine and used eggs and sugar instead of the egg beaters and splenda. They were the right thickness for me. I like to top my pancakes with yogurt and applesauce and some maple syrup. This makes a complete breakfast for me. - 7/29/09

    I too thought they were thick and very different with the wheat flour. A tast hard to describe, but all together I like them. Oh one more thing there wasn't enough cinnamon in them but I could taste the vanilla which was good. I would make these again. - 11/25/08

    These have a great taste but a texture different from standard pancakes. Both of my kids really liked them and couldn't get enough. I would definately make again. They had enough flavor for me that I ate them without any syrup. - 9/30/08

    We added one banana, used 1 Tbls brown sugar instead of the Splenda, and added 1 tsp. baking powder as other reviews suggested. Next time I will add more sugar. There are a lot of variations you can do with this recipe. Thanks for sharing! - 3/24/08

    I changed them by adding heart smart bisquick 3/4 cup and the rest whole wheat. We also added a 1/2 tea of pumpkin pie spice. They tasted better we thought. I think the calories stayed the same which is just as good! - 7/29/09

    Tried them the other day; the taste was a little subtle, but otherwise quite delicious. My only problem was the thickness; I followed the recipe to the letter and the pancakes were so thick I had to add half a cup of water to get them to pour. Other than that, lovely; will make again. - 11/24/08

    I made these once with the Cinammon and once without. My preference was without, but only because I am not a real huge cinammon fan. Regardless, they pancakes are reaaaaaaaaaallly good. I added a few mashed up stravberries to the top and yummmy! - 10/16/07

    The trick to having light fluffy pancakes is to beat the egg whites separately from the yolks and fold then into the batter. Not ever having used egg beaters I don't know if that is possible. - 7/31/09

    Very nice! I eat pancakes right off the griddle as I'm baking them. This had a great flavor. I found the batter thin, so added maybe 1/6th cup additional wheat flour. I use baking powder & lemon juice (1-2 tsp former; 1-2 tbsp latter) so may try that next time. Also used Splenda Blend. - 7/5/09

    I thought these were great! I accidently forgot the Splenda (and I was just going to sub with applesauce) and had to add a 1/2 cup water. They were still pretty thick! Regardless they fill you up! I will make again!! (I promised my husband!) lol - 1/15/09

    I was dissapointed, but my husband liked them. They are heavy and relatively flavorless. After tasting the first pancake I added more Splenda and that helped a little. Trying again with other spices. Thanks for the submission - I will be able to find something that works for me. - 1/8/10

    Great! I used 3/4 cup of Kashi Golean cereal for 8 g fiber and extra protein this adds 110 calorie to the count and I used sweet and low for a sweeter taste then splender offers - 8/1/09
