Introduction

In Greece, they're called "Gigantes" because of the large size of the beans. As with most Greek cooking, making Gigantes is time consuming and loaded with olive oil. Ingredients

    1 tbsp Olive Oil
    1 clove Garlic, minced
    1 small onion, diced
    1 15oz can butter beans, drained
    1 15oz can diced tomatoes.
    1 tsp dried dill weed
    salt and pepper to taste

Directions

Makes 4 1-cup servings.

1. Heat Olive Oil in pan over medium-low heat. Add in garlic and onion and cook until translucent.

2. Add remaining ingredients to the pan and simmer for 5-10 minutes.

    I'm looking forward to trying this healthier version of one of my favorite dishes. My old recipe for greek beans used 2/3 cup of oil! However I will probably continue to use fresh parsley instead of the dried dill when I have it. - 2/25/10

    I didn't have onion, but I made this using fresh dill (also added a bit of lemon juice) and it was SO delicious! Served as a side to Chef Meg's Greek Turkey burger. Made for a very yummy meal! Definite repeat! - 7/1/11

    This really great!! and sooo Simple! I used fresh dill because I love it and 1 really large shallot because I was out of regular onions. I served it with a toasted whole wheat pita that I warmed in a pan with pam...YUM!

    I loved this recipe. It's so simple and tasty.
