Tips

I sometimes use my slow cooker as a "stall cooker." There are days that I need to run the boys out the door for practice and love to have dinner ready to go when we walk in the door. I don't have 4 or 8 hours to slow cook but don't want to wait 45 minutes for rice to cook. Bingo--I use the slow cooker. Two hours in a slow cooker and you will have fluffy brown rice for dinner.


No shallots? Use 1/2 small yellow onion instead.
Don't skip the step of boiling the stock--this will help break down the husk of the rice, which will prevent mushy rice.


Directions

Coat the slow cooker insert with nonstick cooking spray.

Bring vegetable stock to a boil in a small saucepan. Place all the ingredients in the slow cooker, cover and set on low heat. Cook for 2 hours.


Serving Size: Makes 8 1/2-cup servings

    Mmmmm...going to have to try this! I bet it'd work great for a wild rice mix too! My mom always freezes her unused rice into small portions to use for a quick lunch or single serving supper...make up some stir fry veg or something and you're good to go! - 9/10/12

    Great! I absolutely hate hanging around waiting for rice to cook. This way I can cook enough for a few meals, leave it and come back later knowing I haven't set the stove on fire because I forgot all about it. LOL! - 5/9/12

    i cant wait to try this, i never make brown rice because it takes so long.
    if you have a rice cooker- goody for you, some of us cant afford the extra appliance or the extra counter/cabinet space. i already keep my slow cooker on the top shelf in the bedroom. no room up there for a rice cooker too

    Hey, just want to let everyone know that the calories for this is off. 1/4 cup brown rice DRY is a serving which is 160 cals. so this has 640 cals of rice in it total. Nutri info tried to make the comparison with 8 cups cooked rice which is 860 cals. - 12/3/12

    Hmm... I have a rice cooker but sometimes it does come out mushy. I wonder if boiling the stock (or coconut milk for curry!) first will help. I bet it would. Great tip, Meg! - 9/10/12

    I like this idea - sure would free up my rice cooker/veggie steamer for doing the veggies closer to mealtime, while getting the rice going earlier on.

    A slow cooker for rice is pretty unnecessary... You can use a rice cooker (very inexpensive in Target or Walmart), and it takes a fraction of the time and you can still set it up and walk away until you are ready to eat. Its also a LOT easier to clean. - 5/16/12

    I don't know what I did but the first time I did this it had too much water and I ended up cooking on stove.     I don't get Kylar Starn's comment on the cals. This recipe yields eight servings (1/2 cup each) of cooked rice which technically would be about 80 cal just for the rice alone. Personally I don't see anything wrong with the Nutritional info for this recipe. - 1/11/13

    We have a rice cooker which we have used for white rice. Just started transitioning to brown rice by using Trader Joe heat and eat brown rice. Making a larger quantity of brown rice in the rice cooker and storing the leftovers soon will happen. - 9/22/12

    Is that what brown rice looks like. I have never made it before and I thought it was darker in color. That looks like it has wild rice in it but there is none in the recipie - 9/18/12

    after 2 1/4 hours the rice is still not soft and it's still under water. I put it on high too. I wonder if it would have worked better if I'd brought everything to the boil, not just the brother, before putting it in slow cooker?
