Introduction

Since the original recipe submitted by JOEKNEE had ingredients that were higher in carbs (i.e. fat free HH, carrots, turkey), I tweaked it and brought the carb count down some! Remember to calculate Net Carbs (subtract the fiber count from the total carbs) to get the true # of carbs. Ingredients

    1 lb. ground beef, lean
    2 tsp onion powder
    1 tsp basil
    3 cups beef broth
    1 cup each frozen brocolli, frozen cauliflower
    1 1/2 cups half & half
    8 oz. schredded cheddar cheese

Directions

Brown ground beef and drain off any fat. Return to a large pot/dutch oven and add onion powder. Brown a little longer to flavor the meat. Add beef broth, basil and frozen veggies. Bring to boil and simmer covered about 20 minutes until the veggies are tender.
Add in half and half and then the shredded cheese. Take off heat and stir until cheese is melted. DO NOT return to heat or cheese will separate and not look creamy and pretty. (will still be edible, but clumpy).
So many vegetable/cheese combinations to use. Have fun!

    My elderly parents and I loved this. Loved the delicate cheesy flavor. Loved the vegetables. Lots of meat. But really only 4 servings, not 8. Another successful recipe! - 8/18/12

    I doubled the veggies and added a cup of corn to give it more filler, I know corn is high in carbs. Also added extra cup of beef broth and some water to make the servings stretch. Should have added a bit more cheese though. My 12 year old loved it. - 3/30/10

    I love this soup! I didn't have half and half so I used heavy cream. I used baby swiss cheese instead of cheddar. My hubby and 14 yr daughter love it also! - 11/15/10

    Just made this exactly as stated ( except added about a half cup more each of broccoli and cauliflower). WOW this is so good! Added some crushed black pepper to my bowl and thats it. I do feel only one cup isn't enough, so probably more like 4 servings only. Yum! - 9/16/18

    We really like this. It doesn't look real appetizing in the bowl. I use fresh or already cooked broccoli and add it toward the end to add appeal and keep it firmer; and I skip the basil. I also add a bit more hamburger and cheese for our tastes. Thank you for the recipe. I love soup! - 1/11/11

    GREAT!! I used half ground turkey and used fat free half and half and 2% milk cheddar cheese. I am trying to find meals to make for my 24 year old pregnant daughter who does not like to cook-its a great meal-meat, cheese, milk and vegetables. thanks - 1/18/09
