Introduction

Number of Servings: 12

Ingredients

    1 Egg, Beaten
    1 cup homemade buttermilk (I take 1 cup milk and add 2T Lemon juice and then let it sit for 5 minutes)
    1/2 Cup Wheat Flour
    1/2 Cup Flour
    1/4 Cup Wheat Germ
    1/4 Cup Flax Seed- Ground
    1/2 t Salt
    1/2 t Baking Soda
    1/3 Cup packed brown Sugar
    1/2 Cup + 2 T Quick Cooking Oats

Directions

1. Make special milk by combining milk and lemon juice and let sit for 5 minutes

2. In Mixing bowl, combine egg, and special milk

3. Add in Brown Sugar, Salt, baking soda, flax and wheat germ and mix well

4. Add in flours, mix well

5. Fold in oats

6. Pour onto lightly greased, or non stick pancake griddle by 1/4-1/3 cup fulls

7. Turn when bubbles from on top of pancakes

8. Serve HOT!! and add whatever toppings you and your family like. My kids like Peanut butter, I usually have them plain with a little bit of low fat syrup, my husband likes them with butter.

    Tasty! Needed a lot of water to get it to pancake consistency. I did like it better with a mashed banana thrown in. And it made the house smell wonderful paired with the Berry Syrup recipe on this site! - 5/1/10

    I just made these for breakfast and they were fantastic! The kids loved them. I added a smashed banana and about a half cup blueberries. We topped them off with whipped cream and a sprinkle of cinnamon. Yummy! Thank you so much for sharing this recipe!

    I love these, and so does my family, I can't believe how much they like them...they actually ask for them YAY!! Instead of covering them with syrup, I sprinkle sugar and cinnamon mixture on them and eat them that way, they are so delicious and very filling. - 4/28/09

    let me know what you think- my kids love them also they are great if you add 1 smashed banana and some chopped nuts
