Number of Servings: 8

Ingredients

    6 cloves garlic, sliced
2 Tbsp extra virgin olive oil
16 c (packed) stemmed and roughly chopped Swiss chard (about 5 large bunches)
    1/2 tsp red-pepper flakes
    1/2 tsp kosher salt

Directions

1. Heat garlic and oil in large skillet over medium-low heat until garlic begins to turn golden, about 3 minutes. Transfer mixture to small bowl and set aside.

2. Place greens, red-pepper flakes, and salt into the skillet. Using tongs, turn greens until wilted enough to fit in pan. Raise heat to medium and cover. Cook 7 to 10 minutes, tossing.

3. Transfer greens to a colander to drain. Return greens to pan and toss with reserved garlic and oil mixture.

Refrigerate leftover greens in an airtight container for up to 3 days.

I made this twice already, once with spinach and once with kale. I can't wait to try swiss chard. I need to watch the sodium in my diet so I skipped the salt and still thought the recipe was extremely flavourful. Thanks for this! - 5/1/08

Thank you for using lots of garlic. it makes up for the lack of salt porkin tradtional greens recipes. I like to use roasted garlic as its really mellow and my 2 year old will eat it. - 4/17/08

We loved it. My 11 yr old daughter, who loves galic liked it. My husband put pepper, butter & more red pepper on. The rest of us eat it as it was prepared. When making, I used double the galic. - 4/14/08

I grew up eating this and absolutely love it. Swiss chard is very easy to grow in a backyard garden. Spinach is a good alternative as well. I use lots of garlic and red pepper and often use it to make a sandwich with crusty bread for a great lunch or dinner. - 4/11/08

I make something similar with kale but I usually caramalize some onions then add the garlic then just throw all the kale on top (too lazy to cook it separately first). Also throw on some liquid smoke and lemon juice. soooooo delicious and feels like eating pure healthiness. - 4/11/08

I made this to go with yam fries--it was very good, but next time I'll use more galic and pepper, as it was a little mild for my tastes. Still quite good though...swiss chard rocks! - 4/11/08

I used Kale, and after I washed the greens, while they still had the water on them, I microwaved them for 3 minutes, fit in the skillet better and no need for the final 7 to 10 minutes of cooking. I could live on this stuff. - 8/27/07

Cut back on the oil, by more than half, and add a generous squeeze of lemon or lime at serving. Boosts the calcium absorbtion and allows the body to absorb the natural iron in the Chard... and it tastes devine! - 8/21/07

My mother use to make this for us in the 1940's. Just swetted onions, not much garlic grown in New Zealand then, and added the sesonal leafy greens. Cooked slowly it will caramelise on it's own, no need for oil. Over the years I have cooked leafy greens this way and most children & adults love them. - 3/19/10

looks like your nutritional info is off? 2 c raw Sw Chard is about 3g carb with 1g protein and 0g fat....but cooked Sw chard is 14g carb. Since your measurement starts off with raw chard, that's what should be used in calculating nutritional info? Or am I missing something? - 4/11/08
