Introduction

Chowder is one of my favorite foods. I altered my usual version to creat a lower calorie, lower fat version that is still very yummy! It also freezes and reheats well so you can enjoy this corn chowder for weeks after making it. Chowder is one of my favorite foods. Ingredients

    1 pound turkey bacon, cut into small pieces
    2 stalks celery, chopped
    2 small onions, diced
    4 cloves minced garlic
    1 tbsp butter
    1 (14.75 oz) can cream style corn
    1 (15.25oz) can whole kernel corn
    4 cups chicken broth
    6 small potatoes, chopped
    2 carrots, chopped
    2 cups skim milk
    2 tbsp cornstarch
    ½ tsp salt
    ½ tsp ground black pepper
    ½ tsp white pepper
    1 tsp red pepper flakes

Directions

1. Fry bacon in pan until almost done (should be crispy). Add onions, celery, and garlic and sauté until lightly browned.
2. Transfer to large pot. Add cream style corn, whole kernel corn, butter, and broth. Add carrots and potatoes. Add salt, black pepper, white pepper and red pepper flakes. Cook for about 15 minutes on high.
3. Mix cornstarch together with water to form a paste.
4. Add milk and cornstarch mixture. You may need to add more cornstarch mixture to thicken to your liking. Simmer for 30-45 minutes or until ready to eat.

Makes 12 one cup servings

    This was good, but we couldn't really taste the corn in it. Next time I'll add more corn and use less potatoes. Otherwise it was very tasty. - 2/16/09

    I made lots of changes to this recipe based on what I had in the kitchen. Canadian bacon, fresh corn, curry powder, olive oil: yes. Potatoes, carrots, milk, butter: no. Thank you for the ideas: very interesting. I would definitely make this [my way] again. - 8/21/10

    Incredible!
    This recipe was YUMMY! A big hit with my young kids & hubby. I made a couple of revisions, just based on what I had in the house. I used only 9 slices of turkey bacon. Started the bacon in the pot I was going to cook in. Used olive oil instead of butter, 1% milk and pureed the whole thing. - 4/5/09

    I used diced up Canadian bacon rather than the turkey bacon and added a little more salt and pepper. Very good. - 7/28/08

    This is really good and definitely comfort food. However, taste to see if you want to add the amount of pepper listed. It is a little hot for my family. I will make again but just reduce the amount of pepper. - 2/11/08
