This pie will knock your socks off! I make it without pie crusts to save LOTS of calories! Recipe makes two pies, eight slices each. A nice Christmas alternative to yet another pumpkin pie! Ingredients

    2 cups Sweet-potatoes, cooked and mashed (about three average sweet potatoes)
    1 cup sugar
    1 cup evaporated milk
    3 eggs
    2 1/2 tablespoons butter
    1 teaspoon vanilla
    1 teaspoon cinnamon
    Dash of nutmeg
    .25 teaspoon cloves, ground
    2 tablespoons flour
    1 teaspoon salt
    2 unbaked pie shells (if desired, but NOT included in nutritional info!!!)



Directions

1. Preheat oven to 350 F.
2. Mash the sweet potato. You may leave some chunks in there for texture/effect.
Combine all ingredients in mixing bowl; mix well
3. Pour into pie shells or greased pie tins if not using shells.
4. Bake at 350 degrees for 25 to 30 mins.
5. Allow to cool.

    More like a dessert pie than a side dish. I don't think I will use a full cup of sugar the next time, maybe ½ to ¼ cup. Also didn't rise or expand at all. I put it into two pans but will use one the next time. My husband liked it with Reddi-wip! - 5/2/13

    This was delicious! I made a few substitutions (coconut oil instead of butter, and almond oil instead of evaporated milk), and brought to a Holiday party - it was a hit! - 12/14/12

    The taste was excellent. I used a spoon to mix not a mixer and got a very dense pie, next time I will use a mixer to get more whipping and air in the mix. - 12/24/10

    This was an awesome receipe that my kids loved. We made it with out the crust in one big 10 inch pie dish. I sprayed the pan with Pam to reduce the calories and we don't really like pie crust anyways. It took a little longer to cook but was delicious! Half the pie was eaten right away. - 1/14/10

    Very easy recipe. I didn't follow directions exactly because I almost doubled recipe and put in the exact same spices. I baked it all in a very large pie plate and it took a little over an hour to bake. My family enjoyed very much. I will make again. - 12/28/09
