Paired with a couple good veggies this is great comfort food. Enjoy! Ingredients

    4 boneless skinless chicken thighs
    2 cups uncooked white rice
    2 cans of chicken broth
    1 cup of water
    Seasoning of your choice. For the seasoning I use whatever fits my mood. This particular time I used about 2 tsp of Adobo. Usually I'll smash a couple of garlic cloves and grab some rosemary from the garden. Use what you like. I've even used a lovely moroccan blend on this before.

Directions

Pre-heat the oven to roast on 375 F. Rub your chicken down with the seasoning you have chosen. In a baking dish, pour in your rice and add the broth and water. Place the chicken on the rice, cover the dish with aluminum foil. Bake about 40 minutes or until chicken and rice are done. Let it stand a little to cool then serve. Makes 4 servings.
