Introduction
I make this tasty banana bread every Christmas. It's excellent to serve to a crowd, or wrap up the mini loaves and give them away as gifts. Brown sugar gives this delicious bread added flavor. Ingredients

10 bananas, mashed
3/4 cup butter, creamed
3 eggs
6 cups flour
3 tsp. salt
1.5 cups sugar
1.5 cups brown sugar
1 cup low fat buttermilk
3 tsp. baking soda
1 tsp. baking powder
2 tsp. vanilla extract
Directions
Preheat oven to 350 degrees.
In small bowl, stir together flour, salt, baking soda and baking powder.
In large bowl, cream butter. Add sugar, brown sugar and vanilla and mix until fluffy. Add eggs and buttermilk, mixing well. Add bananas.
Pour dry ingredients into wet ingredients and mix until just moistened.
For large loaves, bake at 350 degrees for approximately 1 hour, then reduce heat to 300 degrees and bake for another 30 minutes or until bread pulls away from the sides of the pan. For mini loaves, bake at 350 degrees for approximately 45 minutes. (I bake all of the loaves at one time; I will bake them for 45 minutes, remove the small loaves, then reduce the temperature and bake the large loaves for another 35-45 minutes.)
Remove from pans and cool on racks.
Makes 3 large (8" inch) loaves plus 5 mini loaves. Each large loaf serves 8 1" slices; each mini loaf serves 4 people. This recipe serves 44 slices.
