Ingredients

    1 lbs beef stew meat
    One large yellow pepper
    1.5 cups green beans
    2 large leeks
    two handfuls of small carrots
    fresh spinach, 5 cups or one container
    two cans coconut milk
    one can bamboo shoots
    one large can water chestnuts
    Shitake mushrooms rehydrated, 1 cup
    Curry paste, Taste of Thai, added to taste

Directions

brown stew meat, chop the vegetables (pepper, leeks, carrots, mushrooms), and add to the meat, cooking until desired tenderness. Add the coconut milk, simmer until meat is tender, add the bamboo shoots and water chestnuts. Simmer another 10 minutes. makes 6 servings. Is good the next day for lunch too. Serve over rice or with injera.
