Introduction

Number of Servings: 24

Ingredients

    2 cups wheat flour
    1 Tbsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    3 Large Granny Smith apple, peeled and grated
    6 Medium Carrots, peeled and grated
    2 large eggs
    1 cup plain low fat yogurt
    1 cup packed brown sugar
    4 tablespoons vegetable oil
    2 tsp lemon extract
    3 tsp cinnamon


Directions

1. Position oven rack in the middle position and preheat oven to 400-degrees F. Line 2 standard muffin pans (12 muffins per pan) with paper cups.

2. Whisk flour, baking powder, baking soda, salt, and cinnamon in a large bowl. In a separate bowl, whisk together grated apple, eggs, yogurt, sugar, oil, and lemon extract. Add flour mixture and mix with light strokes until the dry ingredients are moistened.

3. Divide batter among the muffin cups and bake until a toothpick inserted in one of the muffins come out clean, 15-20 minutes.

Makes 24 standard muffins

    did not come out like muffins... didn't exactly rise but the idea is nice
    i think medium carrots and large apples might be too general and I had more than was required... maybe next time measurements in grams or cups?
