Introduction

This is the healthier version of my mother-in-laws recipe for Macaroni Pie. (Note: I have also posted her original recipe with full fat and flavor.) It is possible to reduce the fat more than I have here... but I do not like to lose too much flavor, so do what is best for you and you diet! Number of Servings: 12

Ingredients

    8 oz. Macaroni
    1 T. Smart Balance
    2 large eggs, beaten
    1 - 13 oz. can evaporated milk - fat free
    1 1/2 c. skim milk
    4 oz. extra sharp cheese (cubed)
    4 oz. 2% mild cheese (grated)
    1 t. salt

Directions

Boil macaroni - add 2 minutes to the directions on package. (If you don't boil the macaroni enough, it will soak up the milk.) Drain macaroni, add butter, stir until butter is completely melted.

As the Macaroni is boiling, you can mix together in a bowl, the beaten eggs, milks, cheese, and salt.

Stir macaroni and butter into milk/cheese mixture. Pour into a lightly greased casserole dish. It is optional, but you can sprinkle a little pepper over the top. Bake at 350 for about 45 minutes or until set in the middle.

    I made this recipe with 2% of jack and 2% chedder. I should have used regular cheese for one of them though (as in the recipe) since they didn't melt well. The recipe also seemed "eggy". Still, the leftovers went fast! It might have gotten five stars if I followed the recipe! - 11/29/10
