Introduction

When was the last time you had a decent tomato in winter, or found a jarred pasta sauce made without sugar or loads of olive oil?

Try something new! This simply sauce is made with sweet potatoes, for a creamy, rich, low fat topping for chunky or filled pastas.

Ingredients

    1 medium sweet potato
    3/4 cup 1% milk
    Garlic
    Paprika
    Salt, to taste

Directions

Peel and dice the sweet potato into 1" cubes. Place the potatoes in a microwave safe dish and add about 1/3 cup of water. Cover with a lid or plastic wrap.

Microwave the potatoes for about 7 minutes or until tender enough to mash.

During the last minute of microwaving, melt the butter in a small sauce pan. Then add the garlic, salt and paprika and cook until fragrant.

Drain the potatoes, then add them to the saucepan. Roughly mash them, then add the milk. Mash until the ingredients come together into a fairly smooth, thick sauce. Heat until almost bubbly.

Serve over tortellini or ravioli. For even more fiber or flavor, add 3/4 of green peas to the sauce!
