Ingredients
1.5 lb. chicekn
5 eggs
3 dried mushroom
1/4 c sugar
1/3 c soy
2 scallions, cut diagonally, or 1 onion, sliced
2 c chopped fresh spinach
2 T oil
Directions
Cook rice for 6 people.
Cut chicken into small servings. Beat eggs in a bowl. Dust chicken pieces with flour, dip in beaten egg (reserve extra) and fry on both sides in hot oil until brown.
Meanwhile, combine in saucepan: 1 cup water nad 3 dried mushrooms. Simmer ten minutes, remove mushrooms, and cut fine.
Drain any excess oil from the skillet. Add to skillet mushrooms and liquid, sugar and soy sauce. Simmer 15 minutes.
Add, scallions. Simmer ten more minutes.
Add spinach. While spinach is still bright green, add reserved beaten eggs to skillet and cover. Cook briefly until just set. Ladle over rice servings in bowls.
