Introduction

I don't like celery in cold salads, so I added pickles for crunch and flavor. If I have one on hand, I will add a diced seedless cuke instead, and use either pickle juice or fresh dill to compliment the tuna. Ingredients

    3 c. elbow macaroni, dry
    2 cans tuna, packed in water
    1/2 c. mayo
    1/4 c. light sour cream
    3 tbs. dijon mustard (I like Emeril's)
    3 dill pickle spears, chopped finely
    1 small onion, chopped finely
    3 oz. sharp cheddar cheese, cut into 1/4 in. cubes
    1/2 tsp. salt
    1/2 tsp. white pepper

Directions

Cook the macaroni according to the package instructions. Chop the onion and pickles and mix with all other ingredients in a large bowl with a lid. Drain the macaroni and rinse with cold tap water. Drain thoroughly. Add to the dressing. Stir and refrigerate overnight for best flavor.
