Ingredients

    Red leaf (or other) lettuce, torn into bite-sized peices
    1 apple, cut into slices
    1 oz. pecan halves
    1 oz. soft goat cheese, ripped into chunks
    1/4 cup blueberries (fresh or frozen, thawed)
    splash of lemon juice

Directions

Line a dinner plat with lettue.

Sprinkle on apples, pecans and goat cheese.

In a blender (I use my Magic Bullet), blend blueberries and lemon juice. Pour over the salad.

You can adjust the amount of blueberries depending on how much dressing you like on your salad. And, if you like your dressing a bit sweet, add a teaspoon or sugar or artificial sweetener.
