Introduction

A healthy, whole food version of sweet potato casserole. A little maple syrup can be mashed in with the potatoes, but that will not be included in the nutritional information to the right. Ingredients

    1 sweet potato, cooked, peeled and mashed
    1 tsp. vanilla paste (I use Neilsen-Massey's product and it's wonderful, but you are welcome to use extract)
    1 tbsp. butter, melted
    2 tsp. butter, melted
    1 whole egg, scrambled
    2 tsp. ground cinnamon
    1/2 tsp. ground nutmeg
    1/4 cup chopped pecans

Directions

Mix the mashed sweet potato with the vanilla paste, 1 tbsp. butter, and egg and scoop mixture into two small ramekins. Sprinkle the pecans evenly over each mixture and pour over the remaining 2 tsp. melted butter, 1 tsp. for each ramekin. Sprinkle on the spices and bake at 350 degrees for 25-30 minutes. Do not overbake or the nuts may burn.
