Introduction

Number of Servings: 12

Ingredients

    1/4 c. liquid egg whites
    1/2 c. skim milk
    1/2 c. unsweetened applesauce
    1/2 c. whole wheat flour
    1 c. unbleached flour
    1/2 c. sugar
    2 t. baking powder
    1/2 t. salt
    2 medium apples, peeled and chopped
    1/2. raisins (optional)
    1 t. cinnamon

Directions

Makes 12 regular-sized muffins.

1. Preheat oven to 400 degrees. Spray muffin tins with nonstick cooking spray.

2. Beat egg whites, milk, and applesauce.

3. Mix in rest of ingredients, just until mixed. Do not over stir.

4. Bake for 20 minutes, or until the tops are just golden brown (these will not get really brown).

5. Enjoy!
