Ingredients

6 T Trader Joe's reduced fat mayo
1/4 cup Onions, minced
1/2 tsp Garlic Salt
1/4 tsp Paprika
1/8 tsp Saffron, curmbled between fingers
16 oz Cooked Shrimp, chopped
1/3 cup Reduced fat shredded cheese
7.5 oz Ciabatta bread, cut horizontally in half
2 1/2 cup Butter Leaf Lettuce
Cilantro leaves, to garnish
Directions
1. In a bowl combine the mayo, onion, seasonings and stir to release the colors and flavors. Add the shrimp and stir to coat.
2. Setting the salad aside for 30 minutes, turn the broiler on low. When it is heated up place the Ciabatta under it, cut side up until golden brown. Remove.
3. Sprinkling a light coating of reduced fat cheese on the bread and return to the broiler to melt.
4. Allow the bread to cool slightly before topping with the shrimp salad.
5. Once more return to the broiler for 5 or 6 minutes, just to warm the salad through. Remove and top with cilantro, slicing into 5 portions.
6. To serve place one portion on each plate and garnish with leaves of butter letuce.
