Introduction

I put all of the ingredients into my crockpot in the morning, then shred the beef at night...mmmm, good! I don't like hot peppers, so the diced chilis are perfect in this recipe. Ingredients

    2 c. diet Italian salad dressing
    1 can diced green chili peppers
    3 lbs beef roast
    2 c. onions, sliced in wedges from top to bottom

Directions

Spray crockpot with Pam. Layer roast, then chilis, then onions. Pour salad dressing over all. Cook on low for 6-8 hours. Take meat and onions from pot and let it cool for a bit. Tear the meat up with two forks. Strain the juices, discarding the solids. Add the juices to the meat. It stays moist and delicious that way. Serve on a hard roll or, the way I like it, between two leaves of iceburg lettuce.
