Introduction

I found a recipe for yellow cake from scratch that required real butter, whole milk, real sugar...Whereas when I made it, I did use real sugar, but Splenda(or something splenda like) cuts calories immensely! And Smart balance really does cook like real butter. Ingredients

    1 cup regular Smart Balance, softened
    1 2/3 cups Splenda or splenda-like sweetener
    2 eggs
    3 teaspoons vanilla extract
    3 cups sifted cake flour
    3 teaspoons baking powder
    1/2 teaspoon salt
    1 1/3 cups skim milk

Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 - 9 inch round cake pans or a 9" by 11" rectangle pan.
In a large bowl, cream together the butter and Splenda until light and fluffy. Add the food coloring(optional). Beat in the eggs one at a time, then stir in the vanilla. Sift together the flour, baking powder, and salt. Beat in the flour mixture alternately with the milk, mixing just until peaks form. Pour batter into prepared pans.
Bake in preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

Frosting...wellll, it's good without it ,but for a birthday or celebration, frosting is good stuff. Use your better judgement. Makes 16-24 pieces, depending how you cut it. I calculated the recipe to be 16 servings.
