Introduction

I have been making this version of hummus for a long time now with rave reviews, even though I do not add tahini - to me, the sesame flavor can overpower the other flavors I love so much. Add some coarse ground black pepper for a little variety, or sun dried tomato flakes. Goes well with whole wheat pita bread and tabouli, to make a healthy sandwich. Or just a an appetizer. Ingredients

    2 cans garbanzo beans, drained and rinsed (about 3.5 cups0
    1 tsp sea salt
    1/4 cup olive oil
    1/4 to 1/2 cup lemon juice (fresh is best, start slow, you can always add more to taste)
    up to 10 cloves garlic (can't ever add too much!, adjust to taste)
    Optional additions:
    1 tsp coarse ground black pepper (or to taste)

Directions

Drain, rinse garbanzo beans, pat dry with paper towels before processing. Place in bowl of food processor, then add remaining ingredients, starting with the smaller amounts. Process until it is smooth and thick. If too thick, add a bit more lemon juice and/or oil. Adjust flavors to taste (more salt, garlic, lemon?) Serve immediately (room temperature brings out the flavors) or refrigerate up to 10 days (if it will last that long). Will serve up to 15 people or more as an appetizer.
