Ingredients

    1 tsp Olive oil
    1/4 cup red pepper, diced
    1/4 cup red onion, diced
    1/4 cup tomato, diced
    2 oz. cooked chicken breast
    8 jumbo pitted black olives, quartered
    1/2 cup egg substitute like Egg Beaters
    1 oz. feta cheese
    oregano to taste
    salt and pepper to taste

Directions

Heat olive oil in an oven-safe omlete pan. Cook red pepper, onion, tomato until slightly softened, about 3 minutes. Add salt and pepper to taste, but remember cheese will add some salt as well. Add chicken and olives and heat through then pour in egg substitute. Top with oregano and feta cheese. Once the egg substitute begins to set on the bottom, remove it from the stove and put it under the broiler. Allow top to get brown and bubbly and cheese to melt, about 5 minutes. Makes 1 serving.

    So easy, so fast, so good! Made with cooking spray for lower calories and fat. Added some asperagus. Great protein filled recipe! - 7/14/10
