Introduction

Ingredients

    1 Pkg steamed green lentils from Trader Joe's, about 2 1/2 cups
    1/4 cup finely diced red onion
    2 Tbsp fresh parsley, minced
    1 preserved lemon
    Juice of half a fresh lemon

Directions

Put lentils in a bowl. Rinse preserved lemon, scrape off white rind with a spoon, and chop into 1/4" dice. I used Meyer lemons, so the inside of the fruit came out in lovely wedges. I gently rinsed them and chopped them up and added them. Add lemon bits, juice, onion and parsley & toss together gently. You can eat it right away, but it gets better the longer you let it sit in the fridge. If you serve it on a bed of salad greens dressing is not necessary!
