Ingredients

    Eggplant, fresh, 3 cup, cubes
    Peppers, sweet, red, raw, sliced, 3 cup
    Garlic, 2 clove chopped
    Vegetable Broth, 2 cup
    Red Ripe Tomatoes, 6 cup, pureed or diced
    Lentils, .25 cup
    Beans, red kidney, .25 cup
    Beans, pinto, .25 cup
    Beans, black, .25 cup
    White bean , .25
    Chili powder, 1 tbsp
    4 cup water
    1Tbls Chinese red chili sause or choopped jalepeno
    Salt and pepper to taste

Directions

Dice eggplant, tomato, red bell pepper, garlic, jalepeno and add to slow cooker. Add the mixed beans, water, vegetable broth or vegetable boulion cube, chili powder, salt and pepper to taste and cook on low over night.
