Number of Servings: 12

Ingredients

    - 10 idaho potatoes (med size)
    - 3 fresh garlic cloves
    - 2 celery stalkes
    - 2 or 3 large carrots
    - 5 hard boiled eggs
    - 1-2 lemons
    - 1/4 cup of chopped up cilantro
    - 1/2 cup of mayo

Directions

boil potatoes or cook in microwave in ziplock bag until cooked. boil the eggs in water for 10 minutes. chop celery, garlic, carrots in small pieces and add to a large bowl. when eggs and potato are done also chop into small pieces and add to bowl.

Add mayo and cilantro to bowl and stir to coat everything. When done with stirring everything squeeze lemon juice over potato salad to add flavor and make moist. Add as much lemon juice as you want for taste.

Taste great if served warm. makes about 12 cups or 12 1-cup servings. enjoy!~!
