Ingredients

    1 Rudi's Whole Spelt Tortilla
    3 tbs Trader Joe's Organic hummus
    1/4 avocado
    1/4 - 1/2 cup fresh baby spinach leaves
    3 slices cucumber
    1 oz cheddar cheese (or slice of havarti cheese)

Directions

Spread hummus on one half of tortilla. Mash and spread avocado on the other half. On one side, place cucumber slices, spinach leaves and cheese slice. Fold tortilla over vegetables and chees.
