Ingredients

Fine Bulgur, dry, 1.5 C.
Water, 3 C.
Parsley, minced, 2/3 C.
Lettuce, 1 head (about 4 C. chopped
Tomatoes, chopped, 3 medium
Cucumber (with peel), chopped, 2
Green Pepper, 1 (about 1/4 C. chopped)
Fresh Mint, chopped, 5 sprigs (about 4 T)
Olive Oil, 1/3 C
Lemon Juice, from 2 lemons
Salt and Pepper to taste
Directions
Soak bulgur in water (You can use hot water to speed the process).
Meanwhile chop all the vegetables and place in a very large salad bowl. You may vary the types and quantity of vegetables at will or according to the season.
Drain the bulgur and squeeze out as much water as possible by hand before adding it to the vegetables.
Season with olive oil, lemon juice and salt and pepper to taste.
(I would normally use 1/2 C. olive oil for this recipe. I've reduced it to 1/3 to cut on fat grams).
