Ingredients

    3 medium-to-large sweet potatoes
    2 tbsp fat-free sour cream
    1/2 tsp rosemary
    1/2 tsp thyme
    1 cup shredded cheese (recipe has 4 cheese Italiano blend entered, but low-fat cheese will cut the fat slightly)

Directions

Cook sweet potatoes in microwave (don't forget to puncture with a fork first!) until soft.

Scoop flesh into a mixing bowl, add sour cream, and blend with mixer until smooth. Add rosemary and thyme; blend until well-mixed. Add 1/2 the cheese and stir until blended.

Put mixture in an ovenproof casserole dish and put remaining cheese on top. Bake at 350 F for 15 minutes or until the cheese is melted and the casserole is hot. Serve warm.
