Introduction
If you love bread, but trying to avoid as many carbs as possible, then this is for you. Recipe sounds strange, bread looks strange, but oh so tasty! Ingredients

3 eggs
1/2 tsp. Cream of Tartar
2 TBLS Soy Flour
1/4 cup Cottage Cheese
1 pkt. Splenda or Artifical Sweenter
Directions
Preheat oven to 300 degrees. Oil small loaf pan with vegetable spray.
Separate eggs; beat egg whites with electric mixer until frothy. Add cream of tartar and beat until stiff peaks form, but whites are still moist.
Combine egg yolks, cottage cheese, soy flour, and sweenener and fold into egg whites. Do not overmix.
Pour into prepared pan and bake 40-45 minutes or until loaf is lightly browned.
