Ingredients

    Preheat oven to 350 degrees. In a small bowl, combine the cumin, cardamom, coriander, red pepper, lemon peel, salt, and pepper. Place the pork chops in a zip-top plastic bag. Sprinkle the spice mixture over the pork chops and rub it on both sides.
    Heat a skillet to medium-high heat. Add the oil and sear the chops on both sides. As they brown, put them on a half-sheet pan and finish them int eh oven to the desired doneness.
