    Preheat oven to 350 degrees. In a small bowl, combine the cumin, cardamom, coriander, red pepper, lemon peel, salt, and pepper. Place the pork chops in a zip-top plastic bag. Sprinkle the spice mixture over the pork chops and rub it on both sides.
    Heat a skillet to medium-high heat. Add the oil and sear the chops on both sides. As they brown, put them on a half-sheet pan and finish them int eh oven to the desired doneness.


These ingredients will make three servings. The recipe as printed in the book on pg. 256 calls for double ingredients and serves 6.
