Introduction

Ingredients

5 tablespoons ground almonds
9 ounces tofu
1 cup water, or vegan chicken-style bouillon cube
1 Tbsp soy sauce
3 Tbsp mild vegetable oil
1/4 cup finely chopped onion
1 Tbsp nutritional yeast
2 tsp dried sage leaf
1 tsp minced fresh garlic
1 tsp freshly ground black pepper
1/2 tsp tumeric
1/2 tsp smoked paprika
1/4 tsp dried thyme leaf
1 cup plus 3 Tbsp wheat gluten
Directions
1. If you’re starting with whole almonds, grind them in the blender first while it’s still clean and dry, then remove and set aside.
2. Crumble the tofu into the blender. Add the soy sauce, then add 1 cup water. Add this to the blender.
3. Add remaining ingredients to blender EXCEPT gluten. Blenderise until completely smooth. Empty into a large mixing bowl.
4. Add gluten and mix until evenly combined. You’ll have a soft dough.
5. Turn out onto the countertop and form into a log. Wrap in parchment paper and then in triple layer aluminium foil. Lightly twist the ends together and tie with a couple pieces of string.
6. Bring water to boil in a pot that has a steamer insert. Steam for 1 hour. Then turn off steamer and let stand in there for 2 hours.
