Introduction

I make this often. I make it, eat half and put the other half in the freezer (minus sliced tomato) for sometime when I don't have time to cook breakfast. I also eat half on an English Muffin, half small Pita, or low cal hamburger bun with 2 slices of tomato for lunch. I make this often. Ingredients

    1 egg white plus 1 large egg
    1/4 cup chopped onion
    1/4 cup chopped pepper
    1/2 cup summer or zucchini squash
    1/3 cup Galaxy Veggie Shreds cheese
    Pam butter flavor spray 2 sprays
    4 slices fresh tomato

Directions

Chop veggies add to hot frying pan with 2 sprays of non-stick spray, put lid on pan and steam 1-2 minutes. Stir Veggies and spread over bottom of pan. Lower heat on pan. Mix eggs, veggie cheese and add over veggies in pan smoothing egg mixture evenly over veggies. Return lid to pan, cook 1 minute and then carefully turn egg (using wide spatula) cook 1/2-1 minute more. Serve with fresh tomato slices. (or chopped tomatoes) 4 slices+1/2 half medium tomato, or 1/2 cup chopped. Enjoy! Makes 2 (4 inch slice servings).
