    1 cup quinoa
    2 cups water

    1 large beet
    1 bunch spinach
    1 red bell pepper
    10 leaves fresh basil
    1/2 cup chopped walnuts
    1/2 cup dried cranberries or raisins (optional)


Put quinoa and water in a small saucepan, and cook on medium heat until quinoa is soft. While quinoa is cooking, shred beet, basil and spinach into a large bowl. Cut the red pepper into bite size pieces and add to the bowl. Add chopped walnuts and cranberries or raisins if desired. When the quinoa is finished, add it directly to the bowl, and stir until everything is mixed. Serve and eat hot or chilled.

*You can add pretty much anything to this salad, but here are some other ideas: feta cheese, almonds or other nuts in place of walnuts, any dried fruit, almost any fresh veggies...experiment!
