Ingredients

    Bush's, Black Beans, 1 can, drained
    Cabbage, red, shredded, 8 oz. bag
    Yellow Sweet Corn, Frozen, 10 oz bag
    Scallions, raw, chopped, 3 large
    Olive Oil, 2 tbsp
    Lime Juice, .25 cup
    Cilantro, raw, 4 tbsp
    Tomato, 1 large, chopped
    Cayenne pepper, 1/2 tsp.

Directions

Cook the corn in the microwave according to package directions, let cool. Drain the black beans, add to a large bowl. Add all the other vegetables, drizzle with the olive oil and lime juice, season to taste with cayenne pepper. Mix and chill for several hours before serving.

    I may make this just for the pleasure of looking at it! It sounds like eye candy with all the colors. Looked at the recipe because of the red cabbage, one of my favorite foods, and it sounds very good. - 8/27/10
